- Remove the bird's nest from the freezer and defrost.
- Fill larger cooking pot with water, use high heat to bring the water to boil.
- Double boiling - Pour the bird's nest into a ceramic pot with water(380ml for every 75gm bottle). Cover with a ceramic lid.
- Put the ceramic pot with bird's nest into the cooking pot of boiling water, filled one inch below the rim of the ceramic pot. Cover with pot lit.
- Turn to low heat to double-boil for 20minutes.
- After cooking turn of the heat and open the ceramic lid to prevent over cooking. Add rock sugar and it is ready to serve.
Cooking Method for Dried Bird's Nest in an Electric Slow-cooker
- We can also use an electric slow-cooker as a double-boiler.
- For best results, use boiling water for both inner and outer pots. The water in the outer pot should cover at least 3/4 of the height of the inner pot.
- The double-boiling time(stewing time) begins counting when the water in the outer pot starts to bubble.
- When using a slow-cooker it takes about 45mins to 1hour for the bird's nest to cook.
- To avoid cross contaminating the cooked nest, always use dry and clean utensils.
- Cooked bird's nest can be refrigerated and to be consumed within 3 to 5 days.
